In this series, I will write about South Indian Food – Typically Telugu food

#SouthieSaga Egg Plant or Vankaya 

The shiny purple vegetable with a green crown

Thin and long or fat and round, some give it a frown

Dice it, slice it, fry it, stuff it or marinate it

A chutney, a curry, a kootu, a pulusu, all work with it

My way  is making a paste of  Jeera, Chillies, Ginger and Coriander

In a hot pan, after  seasoning the sliced brinjal, pour this mixture

Imagination is the key, cook this with love

Rice or Roti, this humble vegetable elevates them and how

The trickiest is the Bhagara Baigan, the onion, tomato and varied spices amalgamation

Not for the weak stomached, this rich and aromatic preparation
